Meringue cake: a quick and impressive cake for parties

Or maybe you are preparing an important celebration and you want to do something that will impress your guests? Meringue cake will be perfect for all these occasions! Who doesn’t love meringue? We love it not only for its delicious and delicate taste, but also for its efficiency, class and elegance. What’s more, it is trivially simple and quick to prepare.

What do you need to prepare a meringue cake?

To make the meringue tops:

  • 6-7 egg whites
  • 300 grams of powdered sugar
  • 1 teaspoon of potato flour
  • A pinch of salt
  • 1 teaspoon vinegar or lemon juice

Turn the oven on to preheat to 160 degrees and turn on the fan assist program. Have two baking trays lined with baking paper. While the oven is heating, put the egg whites in a mixer, at room temperature and add a pinch of salt. Whip to a stiff foam. Then gradually add sugar, whole potato flour and vinegar or lemon, mixing constantly. Divide the resulting foam into two baking trays and gently shape them with a spoon. Put in the oven and bake for 5-10 minutes and after that reduce the temperature to 120 degrees and bake for 1.5 hours.

Important note: for a successful meringue it is advisable to use room temperature eggs and metal bowls. Also remember not to open the oven during baking and not to open the oven door after baking. It will leave the meringue to cool completely.

Flour for the meringue

  • 250 grams mascarpone
  • 250 grams of cream cheese
  • 3-5 tablespoons of powdered sugar

Add all the ingredients to a bowl, then whisk for about 5 minutes.

Fruit topping

Your meringue will gain character and flavor when you add fruits to it. They will also give your cake a pop of color. Choose any frozen fruit you like: raspberries, blueberries or forest fruits.

200-300 grams of blueberries/raspberries/ forest fruits

2-3 tbsp powdered sugar

1-1,5 tbsp potato flour

Put the fruit into a pot and defrost gently. Then add the remaining ingredients and set aside to cool completely.

Important note: add the flour through a sieve so no lumps will form. You can leave some fruit for decorating the meringue.

Creating a meringue cake:

Spread the mascarpone cream and the fruit topping on the meringue top. Then cover it with the second layer. You can decorate with the remaining cream and fruit.
