  • 20 g fresh yeast
  • A glass of warm milk
  • 2 cups whole wheat, spelt or regular flour
  • ½ cup erythritol
  • 2 tablespoons melted butter
  • 3 egg yolks
  • Favorite jam
  • A pinch of salt

Prepare leaven: put yeast into a bowl, pour ¼ milk, add a tablespoon of flour and a teaspoon of erythritol. Combine the ingredients and set aside under a cloth to rise (about 15-30 minutes).

In a saucepan, heat the milk, add the butter and then put the flour, sugar, salt and egg yolks in a large bowl. Then add the warm milk with butter and the reagent. Mix everything well together until you get a compact and homogeneous mass. Then cover with a cloth and set aside to rise for about an hour.

After an hour, sprinkle the board and your hands with flour, gently turn the dough out of the bowl and divide into small balls.

Line an oven tray with baking paper and place the balls at small distances from each other. Preheat the oven to 200 degrees on the program up and down, and then put the dough in. Bake for about 10 minutes.

When they have cooled slightly, use a piping bag to fill them with your favourite jam or sprinkle them with icing sugar. Done!
