Coconut cream

  • 3 cups of coconut shavings
  • 4-5 egg whites
  • 50 grams of butter or coconut oil (optional)
  • 1/2 cup erythritol/xylitol or 2/3 cup sugar
  • salt

Separate the egg whites from the yolks, then beat the former with a pinch of salt to a stiff foam. Add your favorite sweetener and coconut shavings. Combine ingredients well. Preheat the oven to 180 degrees, set the toaster program on high and line a baking tray with baking paper. Then put the coconut in gentle intervals. After about 15-20 minutes the cookies will be ready.

You can also prepare the coconut cream with whole eggs, in which case there will be no problem with using the yolks. Both versions are equally tasty, but with egg whites the cookies are fluffier.

These you can additionally press with a fork, so that they are not only flat and gain an interesting pattern.
