Scrambled eggs in a different way – find interesting, tasty and healthy variations on the egg dish!

Breakfast is the most important meal of the day. However, it’s the morning when we have the least time to prepare something that is wholesome, nutritious, tasty, healthy and will give us an energy kick for the rest of the day. But we have a way!

Scrambled eggs are a quick and easy dish to prepare. Just throw the eggs in the pan and there you go, you have a meal! However such a dish can be boring and monotonous so we prepared some interesting variations!

Scrambled eggs with spinach and sun-dried tomatoes

Eggs are an excellent source of complete protein, as well as being rich in vitamins, essential fatty acids and minerals. Adding spinach and sun-dried tomatoes to this dish will give your body the best of everything! So how do you make this dish?

For one serving you need:

  • 2 eggs
  • 150-200g spinach (can be frozen)
  • Onion
  • 4-5 sun-dried tomatoes
  • Tbsp olive oil
  • 2-3 cloves of garlic (optional)
  • Handful of chives (optional)
  • 150 g tomato passata (optional)
  • Salt
  • Pepper

Making:

If you have frozen spinach, it’s a good idea to put it in a small saucepan and heat on low heat until thawed. In the meantime dice or chop onion, garlic and tomatoes. Put the onion into the hot frying pan with olive oil and after a while add the garlic. When the onion is browned add the eggs and season to taste. Finally, throw in the tomatoes, spinach, tomato passata and mix everything together. Ready!

Scrambled Eggs with Mushrooms and Chorizo Sausage

Spanish chorizo sausage will add spiciness and sharpness to your scrambled eggs. Adding mushrooms to your dish also gives you a handful of vitamins and minerals. Especially valuable is selenium, which will strengthen your hair and nails.

For one serving you need:

  • 70 g chorizo sausage
  • 2 eggs
  • Onion
  • 150 g mushrooms
  • Spoonful of olive oil
  • Salt
  • Pepper

Preparation:

Chorizo and mushrooms should be sliced and onion should be peeled. Put chorizo in a frying pan with olive oil and fry for a while. Then add the onion and when it gets glassy add the mushrooms and fry everything for about 5 minutes. When the mushrooms are tender add the eggs, season to taste and fry until the white is set. Ready!

Scrambled eggs with broccoli

Another simple, quick and tasty dish that will provide you with all the necessary nutrients and vitamins.

For one serving you need:

  • Half a broccoli
  • 2 eggs
  • Onion
  • A spoonful of olive oil
  • Salt
  • Pepper
  • 15-30 g yellow cheese (optional)

Preparation:

Wash broccoli, divide into florets and cook. Finely chop onions and fry in hot olive oil for a while. Add cooked broccoli, eggs and season to taste. At the end throw in a little grated cheese and you’re done!
